Did you know that March is Peanut Month, and whats more exciting is that March 1st Peanut Butter Lover's Day, YES it's true, trust me, or just google it! So I've got you ready and prepared for to make! Why am I posting peanut butter brownies in the middle of the week? Because next month is Peanut Month, and even better, March 1 is Peanut Butter Lover's Day!
I don't tend to post too many peanut butter recipes, but I'm a huge peanut butter lover, actually all nuts not just peanuts, especially pistachios, almonds and walnuts. Peanuts also do get a fair share of my diet too! As a kids growing up in the California, I did have PB&J sandwiches known as peanut butter and Jam/Jelly! More strangely I often added a slice of cheese in the middle!
I'm a definitely Reese's Peanut Butter Cup or Reese's Pieces type of girl, chocolate and peanut is like heaven in a bite, the creaminess and richness just makes this girl a happy girl! M&Ms now also do a peanut butter version, keep your eye out for that one.
These brownies are a whole new level of creaminess and flavour because of the peanut butter. I used crunchy peanut butter too, which added this slightly salty and sweet element. It adds a completely different type of richness than chocolate while going hand in hand with the flavours.
How do you plan to celebrate Peanut Butter Lover's Day? I think I will be whipping up another batch of these and get the children to help, mine love helping specially when it comes to licking the bowl and spoon!
Now I know my kids can't actually take these in their lunch boxes as they have a no nut policy, however these are brilliant for a quick snack in between the after school clubs where dinner may be a little later than usual to keep them well energised. Unfortunately when I have a piece or two, I want a warm cuppa and a light snooze!
I took these into work as a part of my birthday goodies, and these literally disappeared by mid afternoon! I think they were the winner out of all the baked good I took in.
Ingredients
200g Dark Chocolate
120g Butter
200g Sugar
1/2 Tsp Vanilla
3 Eggs
250g Plain Flour
1/2 Tsp Baking Soda
1/4 Tsp Salt
60g Peanut Butter
25g Dark Chocolate Chips
In a microwave proof glass bowl add butter and dark chocolate, then melt in the microwave. Heat for 30 seconds then stir, keep heating and stirring until its completely melted.
Add the sugar and stir well.
Add beat eggs and vanilla into the mixture and stir well.
Add flour, baking soda and salt to the mixture.
Stir until all the flour is mixed in, do not over mix.
Pour into a lined baking tray, and spread evenly.
Melt the peanut butter and drizzle over the brownie mixture, then using a skewer swirl the mixture around slightly, then sprinkle on chocolate chips. Bake in the oven at 170c for about 35 minutes.
Once baked, allow to cool completely.
Slice into small pieces
Store in an airtight container and they will keep well for a week to two weeks.
