Baked oatmeal is a great way to change up this traditional breakfast food. The edges crisp up and the oats get that toasted flavor. Baked oatmeal is much heartier than a bowl you simply heat up in the microwave. The other ingredients mixed in with the oats elevate it to a rich, creamy texture that sometimes seems too decadent for breakfast. But this is brunch, and if you remember what I said on Wednesday — brunch is the meal where anything goes!
Peanut Butter and Jelly Baked Oatmeal
1/2 cup Bob's Red Mill Rolled Oats
1/4 cup unsweetened almond milk
1 tsp vanilla extract
2 tsp sweetener of choice
1/2 cup peanut butter
3/4 cup frozen berries, thawed (I used a mix of blueberries, blackberries, and raspberries)
Extra frozen berries to place on top, thawed
Preheat the oven to 375 degrees. Combine all ingredients in a bowl and mix well. Pour into a small baking dish such as a ramekin and top with extra berries. Bake for 20 minutes or until oatmeal is firm. Change oven setting to broil and continue to cook for another 3-4 minutes.
