A few years back my family and I were frequently visiting a popular fast food chain in Italy. Once they had these awesome little bites of pleasure for limited edition. Later on I discovered that they were miniature forms of a very famous snack or antipasto of the Italian region of Puglia.
We made sure to visit the fast food chain every weekend to have our full share of panzerotti. Anyways, as soon as the limited edition ended I tried out the recipe and no need to mention that it was a hit!!!
Now a little about what really is panzerotti? Basically it is stuffed pizza dough that is fried until crisp. Isn't that exciting? For the filling I have used mozzarella, tomato pulp and ricotta with a hint of black pepper and salt to enhance the taste. You can use any vegetarian or non vegetarian filling you like. I have tried a filling of mushrooms, tomatoes and mozzarella and even that was super tasty so there's a lot of room for experimentation in this recipe.

pizza dough300g
tomato pulp 250g
mozzarella250g
ricotta100g
black pepper powderto taste
salt to taste30 g
vegetable oil for frying as needed
Method:
Prepare the filling by mixing together the tomato pulp, mozzarella and ricotta. Season with salt and pepper . Set aside.
Method
Place the pizza dough on the counter top. Make a cross in the center. Cover and leave in a warm place for 30 minutes.Make 12-15 balls of equal sizes. Roll out with the help of a rolling pin to a 5 inch diameter circle.
Place the filling in the center of each circle.
Fold into a half moon shape and pinch the edges with the help of your thumb and index finger.
Tidy up the edges with the edges with the help of a fork. This also ensures proper sealing of the Panzerotti.
Fry until the Panzerrotti are golden brown in color and crisp on the outside. Forget about the gooey cheesy filling inside it's sooo tempting!
Drain on a paper towel and serve hot.
This one was eaten by my daughter, she couldn't let it go so I had to take a picture while she was still holding it. Look at the awesomeness inside!
