A slice of moist zesty lemon and orange loaf is a perfect companion for a mid morning cuppa. I loving make simple sweet loaf at the moment, and yes feeding anyone willing! There's a limit to how much I can subject my poor Hubster to.
A lemon loaf is a normal coffee shop cake, however adding the orange brings out a flavoursome cake with the extra citrus punch.Adding the orange also makes this cake loaf a little sweeter instead of super tart.
This recipe makes slightly more than a normal size loaf, so I split the batter into 2 slightly smaller loaves of which I took one to work for a raffle and the second one was split between home and neighbours.
Ingredients
320g Caster Sugar
3 Eggs
1 Lemon Zest & Juice
1/2 Orange Zest & Juice
350g Plain Flour
1 1/2 Tsp Baking Powder
1 Tsp Salt
250ml Milk
200g Melted Butter
1/2 Tsp Vanilla
Syrup:
75g Sugar
1 Lemon Zest and Juice
1/2 Orange Zest & Juice
150ml Water
To a mixing bowl add caster sugar, eggs, lemon zest and orange zest and beat until light and pale in colour.
Add lemon juice, orange juice, flour, baking powder, salt, milk, vanilla and melted butter to the mixing bowl and mixing for 1 minutes on medium to high speed.
Pour the batter into greased or lined loaf tins
Bake in the oven at 170c for 1 hr and 15 minutes, or until a cake testers comes out clean
While the loaves are baking, add lemon zest and juice, orange zest and juice, sugar and water to a saucepan and bring to a slow boil and simmer over medium heat
until the liquid becomes a thicker syrup.
Once the cakes are baked, immediately remove from the tin and place onto a cool rack on your worktop, and using the cake testers pierce some holes into the loaf.
Spread the orange lemon syrup over the cake while the cake is warm
Then allow the cakes loaf to cool completely and then enjoy!
