One a Day Cookies

These little cookies have lots of goodness with the hidden added seeds! Add the healthy source of seeds like flaxseed, linseed, pumpkin and pine seeds. They add many of the nutrition and vitamins needed on daily basis such as vitamin B’s, Calcium, Iron, Potassium and Magnesium – with many more. The healthy fats and nutrition helps with digestion, skin, hair and Nails not to forget the omega 3 for the brain!
One A Day Cookie

Take flaxseed or linseed for example – they are high in Omega 3 and fiber. Some researchers have suggested that these are great to fight breast or prostate cancers. Flaxseed is also high in vitamin B1, B6 and Magnesium. Pumpkin seeds are another good source of protein, iron, zinc and magnesium, manganese and potassium.

The basis of the cookies is brown flour and oats, which help to feel fuller for longer. Great little kids lunch treat, specially as they are nut free and full of goodness. With the indulgence of a little chocolate – the kids havent even noticed the oats, brown flour or seeds! The seeds add a little crunch and texture to the cookies.

One A Day Cookie

130g Margarine
100g Caster Sugar
100g Dark Brown Sugar
1 Egg
1 Tsp Vanilla
100g Brown Flour
100g Oats
30g Milled Flaxseed
70g Toasted mixed seeds
100g Milk Chocolate
One A Day Cookie

Add the mixed seeds to a small shallow pan and toast over medium heat. I used a mixture of pine, pumpkin,sesame and linseed seeds.

Toast until slightly golden brown.

To a mixing bowl add margarine and sugar and beat together until creamy.

Add egg and vanilla and beat for a further minute.

Add brown flour, oats and milled or ground flaxseed.

Then add the toasted seeds and mix on medium speed for a further minute.

Add roughly chopped milk chocolate

Mix untli the chocolate is incorporated.

Using a small scoop ( about a rounded tablespoon) on to a greased baking tray.

Bake for about 11 minutes at 170c

One A Day Cookie

Allow to cool for about a minute, then allow to cool on a rack.
