I absolutely love these cookies! They were so quick and easy to make. I’m going to make them again for Christmas and add the raisin and walnuts that is called for in the original recipe; but I made them without for a friend of a my sister's. I think the raisins and walnuts will just give the cookies a greater taste than they already have. This recipe will definitely be made over and over again.
This cookie is a perfect idea for the holidays to share with family and friends.

Ingredients: 1/4 cup unsalted butter, softened 1/4 cup vegetable shortening 3/4 cup packed light brown sugar 1 egg 3/4 cups all-purpose flour 1/2 teaspoon baking soda 1/4 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon ground ginger 1/2 teaspoon nutmeg 1/2 teaspoon ground cinnamon 1/4 teaspoon ground allspice 1 cup Old Fashioned rolled oats 1/2 teaspoon pure vanilla extract Preheat oven to 350 degrees F. Line cookie sheets with parchment paper. Using a mixer, cream together butter, shortening, and sugar in a bowl until fluffy. Add egg and beat until mixture is light in color. Sift together flour, baking soda, salt, baking powder, ginger, nutmeg, cinnamon, and allspice; stir into creamed mixture. Fold in oatmeal, and vanilla, blending well. Drop by rounded teaspoons onto cookie sheet.
Bake for 12 to 15 minutes.
