Ginger Butternut Squash Soup

Cook Time 30 mins
Total Time 40 mins
Ingredients
- 1 yellow onion
- 1 1/2 tbsp olive oil
- 2 butternut squash
- 2 tbsp chopped crystallized ginger
- 1/2 inch piece of fresh ginger
- 1 tsp ground ginger
- 4 cups of vegetable broth
- Salt
- White pepper
Directions
1. Chop the onion, butternut squash, and crystallized ginger.
2. Place a cooking pot on medium heat and add the olive oil.
3. Saute chopped onions.
4. Add your desired amount of the three types of ginger and cook for another 2-3 minutes.
5. Add the chopped butternut squash and vegetable broth.
6. Bring to a simmer and cover.
7. Cook for about 20 minutes (stir every 5 minutes) or until squash is tender.
8. Remove from the heat and puree in blender.
9. Season with white pepper and salt to taste.
10. Call the family to the dining table and enjoy a long conversation about your day over a bowl of soup.
Optional: Add some crushed peanuts for a little pizzazz!
