Originally, I was going to bake our favorite Thin, Light and Crispy Nestum Cereal Butter Cookies at here. Then, I thought... Maybe I should toss some pork floss into the Nestum cookie dough and baked it into these small munchie bite-size cookies. Isn't this brilliant idea or what? LOL!
Strangely, a vegetarian-wannabe me is not supposed to think of adding meat into my food!!! Sadly, I just did! Feeling guilty? Oh yes, absolutely! Yet, I have to say that these sweet-and-salty extra-fragrant cereal-based cookies turned out to be really nice with a mostly-crispy-plus-a-little-chewy-flossy texture. So nice that it is actually difficult to resist and stop munching these cookies...
Nestum cereal + butter cookie dough = YUMMY!Nestum cereal + butter cookie dough + pork floss = EXTRA YUMMY!!!
Sweet. Salty. Crispy. Flossy.

60g unsalted butter, softened at room temperature40g caster sugar - please do not reduce this! This amount is required to make the cookies crispy!!!15g egg yolk, at room temperature, about 1 but please use the exact weight.30g self-raising flour - please do not substitute this with plain flour plus baking powder.1/4 tsp salt50g Nestum cereal (contains 13g sugar in every 100g)30g pork floss (can replace with chicken or fish or vegetarian floss)white sesame seeds to sprinkle if desired
Preheat the oven to 160°C/320°F. Line baking trays with baking paper.
Using a wooden spoon or an electric mixer, beat butter and sugar for about 2-3 min until combined. Add egg yolk one at a time and beat well after each addition or until just combined. Sift flour and salt into the butter mixture and use a spoon or spatula to mix until the flour mixture is incorporated into the butter mixture.
Stir in Nestum and floss. Mixture should be wet enough to incorporate this amount of cereal and floss added.
Scoop and arrange tablespoonful of dough onto the lined trays with about 3-4 cm apart. Use the back of a metal spoon to flatten the cookie dough slightly to about 1 cm thick. Sprinkle a small pinch of sesame seeds on each cookie and press very lightly for the seeds to stick onto the dough.
Bake for 15-20 mins depending on the size of the cookies, swapping the trays around halfway through baking or until thoroughly baked with a nice golden brown color. Baking duration may vary slightly due to the size of the cookies. It is important to ensure that the cookies are thoroughly baked so that they will be nice and crispy. Allow cookies to cool slightly on the tray for about 10-15 mins, then transfer to racks to cool completely.Serve and enjoy munching these yummy treats. Store any uneaten cookies in an airtight container at room temperature for up 2 weeks
