{nearly} Homemade Donuts

By Lindsayleighbentley @lindsayLbentley

There are probably a lot of great recipes out there for homemade donuts, but since I was preparing 2 separate breakfasts for this Valentine’s Day, I knew I didn’t have time to do make my own dough.

So, here’s how I improvised!

I bought these natural “pop out of a can” biscuits at Whole Foods:

bisquits

Good enough for me, when it comes to junk food. Non GMO and fairly clean ingredients.

I pressed them flat, then punched a hole in the center.  A small little heart cookie cutter did the trick for this holiday!

Cook in about 1 C. coconut oil on low – med low. (you can use your fat of choice, such as lard.  Just avoid vegetable and seed oils such as canola.)  They only need about 30 seconds – 1 minute on each side.   If the oil is too hot, they won’t “puff” up and will burn on the outside, leaving the inside doughy.

Flip, cook on the other side, and  and then set on a cooling rack.

For the icing I made two:

homemade chocolate donut glaze

  • 1/4 C. Organic Powdered Sugar
  • 1/8 C. Organic cocoa powder
  • 1/2 tsp vanilla extract
  • 2 T. coconut oil (melted)

whisk together and paint over the top of the cooled donuts

These are really fun and Henry loves to help me make them.
