Mug Monday again today, I do love playing with different ingredients and trying to make combinations work well together. It is almost like playing scientist in the kitchen!
This time I’ve decided to play with another eggless mug cookie recipe. Eggless is times hard to work with, specially when you are trying to get a texture like what egg gives.
Ingredients
20g Melted Butter
20g Dark Brown Sugar
15g Light Brown Sugar
1 Tsp Vinegar
50ml Milk
50g Flour
1/2 Tsp Baking Soda
25g Chocolate buttons/chunks
Melt butter in a mug by heating briefly in the microwave for about 20 seconds.
Add dark and light brown sugar to the butter, and using fork mix well.
Add vinegar and milk to the butter mixture and mix with a fork.
Mix in the flour and baking soda, this may make the mixture bubble and rise.
Add chocolate to the mug
Stir in the chocolate then place straight into the microwave and heat for 2 minutes.
The mixture will rise and settle, grab a spoon and dig in or serve with a little ice cream if desired!
