Mini Vanilla Choc Chip Muffin Cakes

Some quick really mini petite cup cakes for kids lunch boxes. They are super teeny tiny and cute! Makes 24 of these mini quick cakes.

Ingredients:
2oz Margarine
2oz Caster Sugar
1 Egg
2 Tbsp Milk
2.5oz Self Raising Flour
1/2 Tsp Baking Powder
1/2 Tsp Vanilla Extract
1.5oz Chocolate chunks

In bowl add egg, sugar and margarine and mix with a spoon roughly.

If it starts to curdle then add in the flour, baking powder, vanilla and milk and mix vigorously by hand.

Stir in the chocolate chunks

Spoon into 24 mini petite cases in a mini muffin pan

Bake at 170c for about 15mins until lightly brown and the cake springs back with a light touch.

Allow to cool – add frosting if desired or keep plain
