Mini Party Pizzas

Happy "Children's Day" to our kids, to the child in us.
Maybe some of you, especially those born in Europe know about Children's Day. It's usually celebrated on June 1. 
I remember when I was a child we used to have all kinds of activities on this day. It was the only day of the year we had the whole street to draw on. Do you remember those drawings with the house in the center, a tree near, cotton clouds and a bright sun? You'd find them near almost every school.
After playing a little bit with Tiffany inside (way too hot outside) I thought about making a special treat. My first idea was mac&cheese but my cheese selection in the fridge was not on my side.
The pizza came to mind. Everyone loves pizza.

But this is not the every day pizza, it's dessert pizza. The dough is a butter cookie, the tomato sauce is a red colored icing and the toppings are some licorice candies and shredded coconut. Now that the plan was made, had to get to work.

In your food processor put 1+2/3 cup all purpose flour (Pillsbury bleached all purpose flour) 1/2 cup sugar6 tbsp butter1 egg1 tsp vanilla extract a pinch of salt

Mix until well incorporated. The dough it's going to be still soft. Don't be tempted to add more flour.

Take the dough out of the food processor and shape it into a log. Put it into the fridge for a couple of hours. When chilled, cut coins using a piece of thread or dental floss.

Arrange the coins on a baking sheet and put it back in the fridge until you preheat the oven at 350 F.   Bake the cookies for about 16-20 minutes depending in their thickness. 
When done, let them cool completely. 
In a small bowl combine 1/2 cup confectioner's sugar with red food coloring and few drops of milk until it forms a spreadable icing.

Spread a little icing on each cookie and decorate with licorice candies.

Top with shredded some coconut or white chocolate.
