These mini muffins are great kids treats or lunch box treats. They making a great balanced treat as the in my book the oats and whole wheat flours offset the chopped up chocolate bars!
Instead making full size muffins, I thought it would be nice to make them into mini muffins ( bite size).
Ingredients:
120g margarine
85g Oats
100g Dark Brown Sugar
200ml Milk
1 Egg
120g whole-wheat Self Raising Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
160g Chocolate bars or mini chocolates chopped into small pieces ( Assorted)
In a mixing bowl add margarine, oats, egg, sugar, milk, flour, baking soda, baking powder and on medium speed mix for about 1-2 minutes.
Stir in the chopped mixed assorted chocolates ( I used a mixture of Cadbury’s chomp, Cadbury’s Fudge, Kit Kats, Crunchie, Cream egg, rolos and Rease)
Using a mini scoop, fill each mini muffin case and baking in the oven for about 15 minutes at 180c
