Mini Oat Chocolate Bar Muffins

These mini muffins are great kids treats or lunch box treats. They making a great balanced treat as the in my book the oats and whole wheat flours offset the chopped up chocolate bars! :)

It’s usually this time of year when your chocolate tin is still rather full from Christmas. Now than we are in the february it’s time to use up some chocolate bars getting ready for all that Easter chocolate that will arrive – or in my case kids birthdays!

These mini muffins are a great way to use up some chocolate, specially the mini chocolates that don’t usually get eaten like in the celebrations/Heroes tins.

Instead making full size muffins, I thought it would be nice to make them into mini muffins ( bite size).

Ingredients:
120g margarine
85g Oats
100g Dark Brown Sugar
200ml Milk
1 Egg
120g whole-wheat Self Raising Flour
1 Tsp Baking Powder
1/2 Tsp Baking Soda
160g Chocolate bars or mini chocolates chopped into small pieces ( Assorted)

In a mixing bowl add margarine, oats, egg, sugar, milk, flour, baking soda, baking powder and on medium speed mix for about 1-2 minutes.

Stir in the chopped mixed assorted chocolates ( I used a mixture of Cadbury’s chomp, Cadbury’s Fudge, Kit Kats, Crunchie, Cream egg, rolos and Rease)

Using a mini scoop, fill each mini muffin case and baking in the oven for about 15 minutes at 180c
