Looking for a way to have individually frozen chicken ready to bake whenever you need a quick meal?
Try these super easy to make Bacon Wrapped Chicken thighs!
Ingredients:
Chicken parts of your choice (we use regular chicken thighs with the skin on them)
Bacon of your choice (we like Turkey Bacon)
Cornmeal
Take a piece of chicken, wrap in one piece of bacon and roll in cornmeal.
These don't taste as good re-heated and are best served right out of the oven. So, if you are going to eat them right away, place chicken in a sturdy roaster pan with a strainer bottom. Cook covered at 400 for 45 minutes, uncover and continue cooking for 15 minutes more.
OR
Freeze uncooked on a baking sheet lined with waxed or parchment paper until firm. Throw individually frozen pieces into a freezer bag. On cooking day, thaw desired number of pieces and cook as above.
