If you haven't heard of Gaby Dalkin yet, now's the time. She was a personal chef for celebrity Jessica Simpson, and she recently published her first book, Absolutely Avocados, She's written for the Food Network, and she's been featured in more magazines than we can count.
We were lucky enough to track Gaby down and have her answer a few of our questions about being the awesome person that she is. Read on, and make sure to follow all the links for mouth-watering recipes.
Why’d you choose to become a chef?
I really had no plans to become a chef! I was pre-med in college and then decided to go into business school. After college I really wanted to hone my cooking skills so I went to culinary school and then things just snowballed from there!

What’s your favorite recipe so far?
I'm really, really obsessed with my Fattoush Salad right now! It's so good, majorly easy, and flavorful!
You used to cook for celebrities? WOW! Tell me more about that!
Haha, yes! I was a private chef for a number of hollywood celebs for a few years. It was so fun. I was lucky to have wonderful clients who were not only lovely people, but super passionate about great food. It was really an awesome job.
You seem to be quite the adventurer! What’s some crazy stuff you’ve done thus far?
I just got back from an AWESOME trip to Brazil! I'm currently seriously obsessed with South America. I'm trying to do the entire country within the next 10 years. So many amazing things to do and eat there!

What is your life philosophy?
I'm all about everything in moderation. I love the balance between healthy eating and indulging every once in a while! Same goes for every other aspect of my life!
Avocados seem to be your absolute favorite ingredient when cooking. What’s your second fave?
CHEESE!! Oh, I love cheese!
What’s the best way for your fans to keep up with you?
I'm on my social media channels all the time! Instagram, Twitter, or Facebook are the easiest ways to get a hold of me. :)
