Masala Rice

Masala Rice
I love Rice Stir fry recipes. The best accompaniment could be raita. I have a good collection of variety rice and pilaf. This is a spicy variety rice. Really quick and we get to use up left over rice and combine vegetables of our choice.
Ingredients: 2 cups of cooked rice (chilled) 1 cup of chopped vegetables of your choice (I have used a combination of carrot and cabbage) 1 medium sized onion roughly chopped 3 tablespoon of refined sunflower oil 1 teaspoon of mustard 1 teaspoon of cumin 2 red chilly Few curry leaves 1 teaspoon of red chilly powder 2 teaspoon of Pav Bhaji Masala
Method:


Heat oil in a wide pan. Fry mustard, cumin, red chilly, curry leaves. Add onion and saute for a minute. Add vegetables and salt. Stir fry till vegetables are semi cooked and crisp. Add red chilly powder and pav bhaji masala. Saute till the raw smell leaves. Add chilled rice and stir well to evenly coat the masala. Serve hot with raita.
