I love M&S desserts, they're a rare treat but a very welcome one! I have never seen this Raspberry & Coconut Macaroon Pudding before but as you can see from the packaging it is currently on special offer for £2.
The pudding only takes 15 minutes, thankfully, to cook in the oven - the smell of the sweet coconut cake filling the house had me counting down the minutes.
I always find Marks & Spencer's cakes and desserts to be of a high quality, and this Raspberry & Coconut Macaroon Pudding was no exception. In fact it far excelled my expectations. This is my first full marks 10 out of 10 product - it was just delicious on every level. The coconut sponge cake is moist, buttery, melt in the mouth gorgeousness. It's topped with a "crunchy coconut crumble" which, even though it is only a thin layer, is one of the most delicious things I've ever tasted. It's crunchy from the lightly toasted coconut, slightly caramelised and full of sweet coconut flavor.
The raspberry compote underneath is full of whole raspberries and has a perfect balance of tart fruity flavor and sweetness. There are some raspberry seeds which can be a bit annoying in a "get stuck in your teeth" kind of way - but honestly it's not enough to make me deduct any points from the my rating.
It's just the most perfect warming dessert, and even has a coconut crumble topping - what more could I want? Actually the only thing I want is another piece... and the recipe!
