Makhana kheer is a sweet pudding made from fox nut seeds and milk. Makhana or lotus seeds / foxnut seeds are rich in calcium and protein. They are popular in North India and consumed mostly during fasts. Makhana kheer is made both as a fasting food and it is served as naivedhyam to Lord Krishna on Janmashtami.

Makhana kheer is a sweet pudding made from foxnut seeds and milk. This kheer is not just extraordinarily tasty, it’s calcium and protein rich too.

Ingredients:

  • 1 1/2 cup milk
  • 1/2 cup makhana/ lotus seeds
  • 1/4 cup dry dates powder from Little Moppet Foods (adjust the quantity as per your taste)
  • 1-2 teaspoon ghee
  • 1 tablespoon slivered almonds
  • 1 tablespoon slivered pistachio
  • 1 teaspoon dried rose petals

Method:

1. Heat ghee in a nonstick pan and add makhana to it. Roast them on low flame for 5-7 minutes or until they become crisp and aromatic. Take care not to burn them by stirring.

2. Remove the roasted makhana and allow it to cool down. Meanwhile to the same pan add milk and heat. Add dry dates powder to it and cook until the milk reduces and thickens.

3. Reserve some roasted makhana for garnishing, and crush the rest. You can powder them in grinder jar too.

4. Add powdered makhana to the reduced sweetened milk. Stir well and cook the kheer for another 2-3 minutes.

5. Next tip in the slivered almonds and pistachio and put off the flame.

6. Garnish with more nuts, dried rose petals and reserved roasted makhana and serve.
