“Living Lite” Meatless Days

About a year ago I decided I was going to have two meatless days a week (most weeks it ends up being more). I have been sticking to the program pretty well. Which days a week end up being meatless are normally a toss up depending on where I’m going and doing that week, it really doesn’t matter to me as long as at least two days end up meatless. This plan came about when I found myself eating meat at dinner most every night and thought eating less would be a healthier choice, saving money also probably played a part in the decision.

I don’t really see this as a “diet” per say because when something is called a diet it makes me think of loosing weight and that isn’t my goal. The main goal is to lead a healthier life through fitness and clean eating habits. However, for lack of a better word to use I am going to call it a diet for now.

The main thing I am excited about from participating in this diet is coming up with so many new recipes and discovering ingredients that go well together, but I never imagined they would. The passion of cooking has been extended so much through this exercise and it feels great anytime I go in the kitchen.
