Lentil Soup

250 gr. lentils

1 Tbs tomato paste (disolved in a glass of water)

1/2 cup Olive Oil

1 garlic clove chopped

1/2 onion chopped

2 bay leaves

1 Chicken or Beef broth (Maggi, Knorr)

Salt, Pepper



Clean the lentils and wash them well. Let them aside to dry. In a caserole heat the olive oil and add the lentils and saute them for 3 – 4 minutes mixing well. Add the tomato paste water, more water to cover, the garlic, the onion, the broth, the bay leaf. Let it boil once in high heat and reduce the heat. Season the soup. Let the lentils cooked for 3/4 hour or 1 hour in medium heat checking from time to time if they have enough water to boil. Serve warm with red wine vinegar or balsamic vinegar.
