Hi friends,
Today I'm coming with another quick update here on the blog to share with you this delicious, easy to put together ''Lemon & Yogurt Cake". Just like any other baking recipe on the blog I like to keep it simple, I enjoy making quick cakes...so I don't have to wait long to taste it!

Lemon and yogurt are by far one of my favorite flavors to combine when making cakes or cupcakes and other quick desserts and treats. That citrus aroma is something that immediately takes me back to my hometown...they're always the same memories coming back...me and my brothers picking up lemons and citrus fruits around the neighborhood to then coming back home and make a few liters of lemonade and orange juice... but they're the memories that I like to keep remembering. Just like a favorite old movie you like to watch over and over again. And if you follow me on Instagram or have been on the blog for a while you already know we are fortunate to have a couple of citrus trees where we live.  Last time I posted a few pictures on Instagram getting the last lemons of the season from our little tree here and here. I like to keep them in the fridge since they last longer in there, so just the other day while I was gathering the ingredients to make this Lemon & Yogurt Cake when I realized there weren't any more lemons left in the fridge! Oh, well I said to myself I better go and buy some lemons but to my surprise, there were two lemons hanging from a small branch hidden behind lots of green leaves from the tree, and so I couldn't be happier! I took them right away and started mixing and baking! Well, those two lemons were as juicy as the others were and they made this cake just perfect. This cake is not too sweet since I decided to make some icing glaze to go with it and that just gave it the right amount of sweetness to my taste but you can skip the icing topping and make this lemon cake without it and add a bit more sugar in the batter if you like. This cake is so simple and delicious to make that it wouldn't be fair not to make it guys! đŸ�°

EASY LEMON & YOGURT CAKE RECIPE

This cake is not too sweet since I decided to make some icing glaze to pour on top and to my taste that just gave it the right amount of sweetness but you can skip the icing topping and make this lemon cake without it then add a bit more sugar in the batter if you like.
2 Cups All-purpose flour  1 1/2 tsp. Baking powder 3 Medium Eggs 3/4 Cup Organic Cane Sugar  1/4 Cup Plain Yogurt 3/4 Cup Sunflower Oil Lemon Zest of 1 lemon 4 Tbsp. Lemon Juice or more if you'd like
Preparation:
Preheat oven to 180C/356F.
1- In a bowl sift flour and baking powder, mix and make a well in the center. Then add eggs, sugar, yogurt, sunflower oil, lemon zest, and lemon juice. Mix well until all ingredients have been incorporated.
2- Pour mixture into a greased baking pan and bake for 35-40 minutes (but time may vary depending on the type of oven you're using). When ready let it cool and prepare the icing.
To Prepare The Icing Glaze:
In a little cup or bowl add 3-4 tablespoons of confectioner's sugar then start adding little teaspoons of water  (just about 1/4 teaspoon at a time) while mixing until it starts to thicken. Then pour onto the lemon & yogurt cake!
