When I mentioned to Kid #1 what I was making, he was eager to help while Kid #2 wasn’t so sure about the idea of lemon bars. He had never had them before!
The end result? No one will keep out of this Lemon Bars Recipe. I’m pretty sure my husband even snuck one for breakfast! It’s such a great cool dessert recipe perfect for the hottest month of the year.

A family favorite for many, many years.
Ingredients
- 3/4 Cup Butter, Softened
- 2/3 Cup Powdered Sugar
- 1 1/2 Cup Plus 3 Tablespoons Flour, Divided
- 3 Eggs, Lightly Beaten
- 1 1/2 Cups Sugar
- 1/4 Cup Lemon Juice
- Powdered Sugar, for Dusting
Instructions
- 350* oven.
- Grease and set aside baking pan.
- In large bowl, beat Butter and Powdered Sugar until combined.
- Gradually beat in Flour.
- Press into bottom of baking pan and bake 18-20 minutes or until light golden brown.
- Meanwhile, in a small bowl, combine Eggs, Sugar, Lemon Juice, and remaining Flour until frothy. Pour over hot crust.
- Bake 20-25 minutes longer or until topping is set and lightly browned. My lemon bars did not brown all over, but only on the sides.
- Cool completely on wire rack.
- Dust with Powdered Sugar.
- Cut into bars and refrigerate leftovers.
