how to make instant mango pickle

  1. Wash raw mango, peel off the skin and grate it using a grater.
  2. Heat a kadai, add oil, and season with mustard seeds. Once the seeds splutter , add grated mango and saute in low flame for 5 mins.
  3. Then add the required amount of salt, 3 tsp of red chili powder, 1 tsp of mustard powder and 1 tsp of fenugreek powder.
  4. Mix everything really well. Stir occasionally in low flame.
  5. Add some more oil if you see the oorugai are dry.
  6. Stir until the oil starts oozing. Once you find the oil starts oozing, turn off the flame . cool down and transfer to a glass or ceramic jar.
  7. Serve it with curd rice or sambar rice. Keep it refrigerated.
