how to make instant mango pickle
- Wash raw mango, peel off the skin and grate it using a grater.
- Heat a kadai, add oil, and season with mustard seeds. Once the seeds splutter , add grated mango and saute in low flame for 5 mins.
- Then add the required amount of salt, 3 tsp of red chili powder, 1 tsp of mustard powder and 1 tsp of fenugreek powder.
- Mix everything really well. Stir occasionally in low flame.
- Add some more oil if you see the oorugai are dry.
- Stir until the oil starts oozing. Once you find the oil starts oozing, turn off the flame . cool down and transfer to a glass or ceramic jar.
- Serve it with curd rice or sambar rice. Keep it refrigerated.
