Indian Style Healthy Egg Salad Recipe

Boiled eggs are an excellent way to make sure that kids get enough protein, but they may not always be welcomed with open arms. We’d recommend tossing them with finely chopped vegetables and seasonings to make a delicious and healthy egg salad! This egg salad can be served as a side dish with meals or as a mid-day or after school snack for kids. If you have boiled eggs ready at hand, making this salad is a breeze!

Indian Style Healthy Egg Salad Recipe

Boiled eggs are bursting with nutrition, but may not always be welcomed by kids! Try out this Indian style egg salad that's also loaded with veggies!

Ingredients:

  • 2 boiled eggs
  • 1 small potato, boiled (optional)
  • 1 small red onion, finely chopped
  • 1 tomato, finely chopped
  • Small bunch of fresh Coriander
  • Juice of 1 lemon
  • ¼ teaspoon freshly crushed black pepper
  • Salt to taste (optional)

Method:

1. In a bowl mix together boiled potato chunks, chopped onions, chopped tomatoes. Add boiled egg pieces and toss lightly.

2. Season the salad with salt (if using), freshly crushed black pepper powder and lemon juice.

3. Toss lightly. Garnish with finely chopped fresh coriander leaves and serve .
