Hummus Love | Recipe

I first had Hummus at a Mediterranean restaurant, Acropolis I think. I found it really creamy and delicious. I happen to have a soft spot in my heart for dips, spreads, chutneys and the like. This was a unique new addition to my list.  I then went on to try the local grocery-store version of it and since then, I have had a tub of it in my fridge at all times!

I have had moments where no hummus in my fridge made me panic that everything was not right in the world! *drama queen*

But well it is true. My love affair has been solid with Hummus, I have tried many variants of it like garlic hummus, pepper, pine nut, ‘pizza’, onions, olives, artichoke….

I also would eat hummus with anything and everything. After the classic pairing of chips, pita, veggies like carrot, cucumber, I have also used it in sandwiches, wraps, as a side with grilled chicken, fish. There have also been times where i was too tired to make dinner and had plain rice or a roti(indian tortilla) with hummus and felt so satisfied!

My relationship with hummus was at the live-in stage and I had debated about taking it to the next level but just could not commit. And I finally did it on December 2nd.

I made a beautiful batch of hummus in my kitchen, and we are happily married and in absolute bliss since then!

Step 1: After soaking chickpea overnight, boil them with salt. Or you can use tinned chickpea which are already boiled.

Step 2: In a blender, add the chickpea, 2tbsp of Tahini paste. I bought Tahini paste from Trader Joe’s, most grocery stores carry it.. Also, I was not sure how much of the paste to add so I added only 1 tbsp at first, and then after blending I added another tbsp.

In the blender, also add in chopped garlic cloves. Again, this depends on your taste. I love garlic, I added 2-3 cloves. Add a squeeze of lemon juice, chopped green chillies, 2-3 tsp salt, 1-2tsp red chilli powder or paprika to taste.

Step 3: Blend!!!! As you blend, add in a little olive oil. I added not more than 2tsp of oil. You can add more to get it more creamy, I also added some water to blend smoothly.

Step 4: Taste it, season with more salt or spice as you’d like! And voila…that’s it seriously! Garnish it with some more garlic or coriander!
