Start with the sauce.
Get your sauce going in a skillet while the pasta is cooking. When the pasta’s almost done, scoop it out of the water and into the sauce–it will finish cooking in the skillet.
The strainer.
Use a tool called a spider to transfer the pasta to the skillet.
Be water wise.
Don’t dump that starchy pasta in cooking water. Instead, mix some of it into your sauce to thin it slightly and make it creamy.
