Homemade Baileys Recipe

When you have guests for dinner, whether for a special occasion or simply to spend the evening with friends, it is always a good idea to end the meal by offering a drink. A coffee, tea or why not a glass of liquor? For those special moments, I offer this homemade Baileys Irish cream recipe.

Obviously, it will not be exactly like the original Baileys, but it will be a quite close substitute and very good Irish cream version made by you, to which you are adding your personal touch.

Not to mention it is a lot cheaper alternative too.

How To Prepare Irish Cream (Or Homemade Baileys)?

The recipe here gives the proportions of whisky and sweetened condensed milk that I normally use. The quantity of other ingredients are approximate and I vary them according to the desired result. Sometimes I add more chocolate, sometimes more coffee ... try it with a little toffee or salted butter caramel candy. That makes it even greater!

The making of this whisky cream is very simple, we mix it all with blender and voilà. You see, it's very easy to prepare and it's ready in a few minutes. The whisky I usually use is not a high quality whisky, this one is said to be good enough to be enjoyed on its own. It's not the cheapest either, I tried with the cheaper ones and believe me the result is not great.

I recommend you use the whisky you like for cocktails, especially the whisky you can add to Coca Cola. For the purpose of this article, I put an Irish whisky that without being very expensive I find to be good enough. Here's the recipe.

Tips And Tricks

This homemade Irish cream is served well chilled. Eventually, with ice.
You can keep it several days in the refrigerator in a well closed bottle. Although I usually prepare it when I have guests, rarely anything is left until late evening, or the little that remains I usually consume within 1 or 2 days.

It's possible the ingredients will separate if we keep it for too long. If this happens, mix it again or shake the bottle or container you are storing the liquor. If you want to prepare whiskey cream and keep it intact (not separating) for a long time, add 1 tablespoon of food glycerine at the end and mix well. This food glycerine can be found in specialty pastry shops. It can also be purchased online (Amazon, for example).

If you want a stronger Irish cream, feel free to add more whiskey.

( * ) Use the concentrated coffee, which is the first drops that come out of the coffee maker as it loses intensity the longer you brew it.

Whisky cream can be flavored not only with chocolate, coffee and vanilla, but also with caramel, almond extract, or cinnamon... avoid flavors that give acidity, like lemon for example.

To give it a more liquid consistency and soften its flavor, add a little liquid cream.
There's no need to use high-quality whiskey. Use your favorite scotch or whiskey brand.

Enjoy!
