Healthy No Bake Cookies

Stay cool with cookies this summer without ever turning on your microwave oven. These are super easy to make at the drop of your hat.

These healthy no bake cookies are made with a few simple ingredients and are insanely easy to make. These gluten-free cookies are loaded with peanut butter and laced with chocolate flavor. The best part of this recipe is it is made in less than 30 minutes.

These healthy no bake cookies are an awesome dessert-like treat for your family.

The secret to each cookie is having a perfect ratio of sticky wet ingredients (like honey or peanut butter) to dry ingredients (such as oat flour and shredded coconut). Having the right balance of wet to dry allows the cookies to keep their form once they have set in the refrigerator as opposed to baking them in the oven. Plus, they don’t require the same heat treatment that other cookies usually call for.

My childhood cookies were loaded with sugar and butter. Those were delicious and tempting, but not-so-good for health. These are a healthy take on childhood favorite and I swear you can’t even tell the difference!

I survive on these oats during our travels. It’s not a coincidence that I also found these no-bake cookies were amazing travel companions during our trip.

Healthy no bake cookies tips and tricks:

Measure and have all your ingredients and baking sheet ready in advance. It will make it easier to place the cookies if all your ingredients and items are in order. The Peanut Butter No Bake cookies can harden on you if you don’t work quickly.

Set cookies in the freezer for 10-15 minutes to allow them to set quickly.

If mixture is a little bit thick or dry, simply add 1-4 Tablespoons of milk to the mixture and stir. This should look out of the dry issue and make dropping the cookies easier.

Pro healthy no bake cookie tip

Drizzle with chocolate. You can make my your own homemade peanut butter cups so that you can control the sugar in it but still keep all that chocolaty flavor intact.

Ingredients:

  1. 1¼ cup gluten-free quick oats
  2. 6 Tablespoons creamy peanut butter
  3. 4 Tablespoons honey
  4. 1 Tablespoon cocoa powder
  5. 1/4 teaspoon sea salt
  6.  ¼ cup unsweetened almond milk(optional)

Directions:

  1. In a microwave safe bowl, heat peanut butter and honey together for 1 minute or until you are able to stir it together smoothly.
  2. Gradually add cocoa powder until combined all together.
  3. Stir in quick oats and salt. Slowly add almond milk a bit by bit at a time if mixture is a little dry.
  4. Place cookies on a cookie sheet lined with parchment paper. Place in the fridge for 25-30 minutes to set before serving.

Store the leftovers in the air tight container.
