As I try and exercise as much as possible I do have to think ahead when it comes to making healthy meals as its just as important to eat well as it is to keep your exercise levels up...I try and make my meals...especially after exercise...as high in protein as possible and with as many vegetables as I can...
With my stomach issues I do find root vegetables more difficult to digest so the main ones I stick to are peppers, leeks, courgettes, mushrooms, spinach and cherry tomatoes...all of which you can find in this dish...
Other vegetables would work if you have them including sweetcorn, aubergines or red onion...
For this dish I used all of these ingredients as well as skinless, boneless cod fillets...hot sauce...paprika...and a small amount of olive oil...
Chop the leeks, peppers and courgettes into small chunks and add to a large bowl...slice the cherry tomatoes in half...roughly chop the spinach...and add these along with the olives to the bowl...
Add the a dash of olive oil...as much hot sauce as you want for taste...and a sprinkling of paprika and stir so the flavor is all over the vegetables...you may think this looks a little dry but bare with me...
Lay two large pieces of kitchen foil on the surface and divide the vegetables between each...layer on the fish fillets and add another sprinkling of paprika...
From each of the long edges join together and wrap the fish and vegetables into parcels as so...
Its at this point you could either leave this like this in the fridge to cook later or put on a baking tray to cook...
I usually pre-heat the oven for 10 minutes at 180 degrees and then cook for 20-25 minutes depending on the size of the fish portion...
Once cooked open to let the steam out and you will notice the water from the vegetables cooking and the flavourings added at the beginning have formed a sauce which is delicious...not so dry anymore ay...
I usually serve this with brown rice and if I'm particularly hungry some steamed broccoli...delicious...
I love this meal as its so versatile...you could change the flavourings to what you prefer as well as the seasoning...change the fish to chicken and cook for an extra 5-10 minutes...or use smoked cod/haddock fillets or salmon...you can even change the vegetables you use within it (I tend to use whatever is in the fridge at the time...its great to use up leftovers)...
As well as this you could also make this the night or morning before so you can come straight home from the gym...chuck it in the oven...have a shower and put your pj's on...and eat...yum...
