Healthy Meals...Chicken Casserole...

I love using my slow cooker to do make tasty meals throughout the day...winter or summer its always useful and a fantastic way to make healthy dinners in a large batch with minimal effort...
I first got this recipe from Slimming Eats and decided to give it a go as it sounded so delicious...and maple syrup in a savoury dish just sounded amazing...yum...
Here are the ingredients...
* 6 boneless skinless chicken thighs chopped into bite sized pieces
* 2 carrots sliced
* 400g butternut squash peeled and cubed
* 5 cloves of garlic
* 1 onion chopped
* 1 red pepper sliced
* 1 courgette sliced
* 120ml soy sauce
* 120ml water
* 2 tablespoons maple syrup
* 1 tablespoon tomato paste
* 1 teaspoon paprika

As usual I changed a few things about the ingredients...just fussy me being me...The recipe called for chicken thighs but I used chicken breast as that is what I had ready but Im sure using boneless skinless thighs would be a little tastier...also I didnt have a courgette...and forgot to pick one up when I went to the fruit and veg shop...so used 1 red pepper and 1 yellow pepper...I also used the ready chopped jar of garlic and paprika I bought back from Morocco...
We had maple syrup left over from pancake day so this seemed like the perfect way to finish it off...
The recipe is sooo simple its unbelievable but all the ingredients are low fat, low carb and super tasty...
Just chop all the vegetables up and put in the slow cooker...

Add the chicken...tomato paste...garlic...soy sauce...water...paprika...and stir...

Cover and put on low (or high for 6 hours if youre at home...I was at work so put it on low until I got home from work) for up to 9 hours...I stirred it half way through after about 5 hours...and then left it again...

It was finally ready...and by the by the house smelt a.m.a.zing by the time it was done...and was time to eat...I served it with a jacket potato as a healthy carb...can also be served with wholegrain rice or quinoa as a source of high protein...brocolli would be a good addition too...

This would easily serve 4 if not 5 at a push and is perfect for putting into portions and freezing for antoher time as an easy go to meal...
