So far this Summer has been Hot, Hot, Hot!! I have been doing my best to keep cool by wearing lightweight dresses, drinking lots of water, using the evenings as my outside-time, and eating lighter foods. I am always trying to eat as healthy as I can, but Summer definitely makes me want to splurge with some ice cream a little more than usual. So I decided to create a healthy alternative that can satisfy my sweet tooth and help keep me cool!!
These Coconut Mango Basil Popsicles are so delicious and the secret is the Dorot Chopped Basil from Trader Joes! This stuff is genius. I always struggle chopping herbs, because I feel like I can never get them fine enough. Dorot does the hard work for me and provides me with the perfect sized cube so I can easily pop it into my recipes with no chopping required! Dorot provides a variety of herbs for you to choose from, including chopped cilantro, chopped parsley, and crushed garlic (even though garlic isn't technically an herb). These Dorot cubes come frozen, so you can keep them in the freezer and not have to worry about the herbs going bad before you use them (this is something I always struggle with)!
Coconut Mango Basil Popsicles Ingredients
1 cup Coconut Milk
1 Mango - peeled & chopped
1 Avocado - peeled & sliced
1 Banana - peeled
3 Dorot Chopped Basil cubes
Directions
In a blender, combine all of your ingredients and blend until smooth. If the mixture seems a bit thick, just add more coconut milk until it reaches the desired consistency. Pour the mixture into popsicle molds and freeze overnight. Once you're ready to serve, run the popsicle molds under warm water for 30 seconds, remove the top of the mold, and enjoy!
