Hi Guys! It is so nice to be writing for all of you fabulous Hooah and Hiccups blog lovers! Thanks for having me :) My name is Christin I am from a small town in Tennessee and I am just starting up a new blog.
Babies, Bosses, and Boyfriends is my confessional of my crazy/hectic (wouldn't have it any other way) life. :) I am a full-time mommy to my 1 1/2 year old son, a full-time employee at a prestigious company, a full-time girlfriend to my amazing boyfriend, am currently back in school part-time (thank goodness!) to obtain my MBA, and to top it all off me and the BF are expecting baby #2 in early March!

My crazy little (growing) family!


I have started a segment for the beginning of each week called Mouthwatering Mondays! The goal of this segment is to provide a quick and easy recipe for a typical manic Monday. Soooo let me share with you one of my family's favorite quick and easy meals.
I am not going to lie, I am not one for left-overs. Those cold yucky meals sitting around in the refrigerator that you just ate the night before...why would you want to re-heat them and eat the same thing again?? But who likes to waste food??  So here is one of my quick and easy solutions for a different twist on leftovers.
One of my family's favorite meals is Semi-Homemade Chili. Be sure to checkout the recipe :) This recipe makes A LOT of chili and we almost always have left-overs. (Yuck right?) Not anymore!

Chili-Corn Bread Casserole

Ingredients

Chili (Homemade or canned will work too!)2 bxs Jiffy Corn muffin mix2 eggs2/3 milk1/2 cup sugar

Directions

Pre-heat oven to 350 degrees. Place all (left-over) chili in the bottom of a medium ungreased casserole dish. Mix Corn Muffin mix, eggs, milk, and sugar together in separate mixing bowl until well blended. Pour Corn batter on top of chili in the casserole dish. Bake for 20 - 30 minutes or until the cornbread is golden brown. 
And it is as Simple as that! I know sounds too good to be true, but I promise it tastes so much better than you could imagine!
Maybe its a Southern thing, but my family cannot get enough of this stuff! Even my one year old wants second helpings!
