Guest Blogger: Zen Fans – Kale Almighty

Vegan MoFo is upon us, but I have a slew of lovely guest bloggers who have been very kind to send in posts so I’d like to honour their contributions. One such blogger is Ted. Here is Ted, author of Zen Fans in his own words!

“I am passionate about fitness, adventure, (plant based) nutrition and spirituality (FANS) and love sharing what I learn as my life evolves. While I’ve been health conscious for over 10 years, it wasn’t till about a year ago that I made the conscious decision to give up all animal products from my diet. Since then I’ve had some great results (which I look forward to sharing) and have attracted people to me that are interested, or at least curious, about my plant based diet. While I imagine most of them have no desire to go vegan, they all at least want to make some positive changes in their life. Often I am asked about what I eat, what supplements are necessary, how to make a good green drink or protein shake, how to lose weight or gain muscle and much more. While I do not have all the answers, my passion for learning pushes me to find the answers. I am a NASM Certified Personal Trainer and a Certified Fitness Nutrition Specialist, but my main credential is my passion. I am on a quest to optimal health and happiness and using ZenFANS to share what I find. I welcome your questions and comments and hope you’ll join me on my journey.”

By now you’ve heard of all the benefits of kale so quit procrastinating, do yourself a favor and make a kick ass kale salad. If you haven’t heard, here’s a sampling of the benefits of kale…

Detoxifies, reduces inflammation, strengthens immune system, protects against cancer and heart disease and much more. Kale contains:

Fiber

Iron

Beta Carotene

Folic acid

Vitamin K

Vitamin C

Vitamin A

Vitamin B6

Antioxidants

Omega 3’s

Magnesium

Phosphorous

Manganese

Hopefully you’re convinced by now, eat your kale! Here’s a delicious way to do so…

Clean a head of kale. Remove large stems. Put in large bowl. Squeeze lemon juice of one lemon over salad. Add S&P, massage kale. Yes, massage kale. It will make leaves tender and make kale taste less bitter… so get your hands dirty. Then add one diced avocado and lightly massage again. Add one chopped red bell pepper and a handful of almond slivers. This salad is so good and so good for you… so go get your greens on!
