Cheers to my Summer salad obsession! This is a Sept 2012 Cooking Class creation- that was love at first bite! Make this for your next gathering, you won't be sorry and everyone will ask you for the recipe. I promise!
Greek Orzo Salad
Salad Ingredients;Orzo Pasta (1 cup)Spinach (sliced thin)Red Onion (diced)Cucumber (diced)Olives *I prefer Kalamata* (sliced)Feta Cheese CrumblesCherry Tomatoes (quartered)
Dressing Ingredients;Grapeseed or Olive Oil (1/4 cup)Red Wine Vinegar (2 Tbsp)WildtreeOpa! Greek Seasoning Blend (2 Tsp)Lemon Juice (dash or two)
***Combine all Salad Ingredients listed above, measure to taste.Mix together with cooked and drained Orzo.
In a separate container mix together Dressing Ingredients listed above.Pour dressing over salad mixture. Toss salad until completely coated, chill and serve!
