Greek Avgolemono Soup (Easy)

1 1/2 litter water

1 chicken broth stock (Maggi, Knorr)

1 1/2 cups rice (washed)

3 Tbls olive oil

1 egg

2 lemons (Juice)

Salt, Pepper


Add into a pan the water, the stock, the olive oil and  the rice and bring to boil in high heat. Reduce the heat at low and leave it cooked the rice stirring occasionally. Meanwhile beat the egg with the lemon in a bowl. When the rice is cooked take the pan out of the fire and take bit by bit the broth of the soup and add it slowly into the lemon – egg bowl stirring very well. You must be carefull not to be cutted the egg and been in pieces. Add the avgolemono slowly into the pan with the rice mixing well. Add a pinch of salt. Serve hot with a pinch of pepper.
