Goan Chicken Vindaloo

Goan Chicken Vindaloo


Ingredients:
Chicken - 500 gms, cut into pieces
Butter - 2 tblsp
Onion - 1, medium, sliced
Ginger Garlic Paste - 1 tsp
Cinnamon - 1/2 inch stick
Red Chilli Powder - 3/4 tsp
Mustard Powder - 1/2 tsp
Turmeric Powder - 3/4 tsp
Cumin Powder - 3/4 tsp
Salt as per taste
Water - 1 tblsp
Sugar - 1/2 tblsp
Cloves - 2
White Vinegar - 1 tblsp
Tomato Puree - 1/2 tsp

Method:
1. Mix the vinegar, 1/2 of the sliced onions, ginger garlic paste, cinnamon stick, red chilli powder, turmeric powder, cumin powder and salt in a bowl.
2. Blend to a smooth paste.
3. Add sugar and mix well.
4. Add the chicken pieces and mix well to coat evenly.
5. Keep aside to marinate overnight.
6. Heat butter in a pan.
7. Add the remaining onion and fry till transparent.
8. Add the chicken pieces, water and tomato puree.
9. Cover the pan with a lid and simmer over low heat for 20 to 30 minutes.
10. Cook till the chicken is tender.
11. Serve with cooked rice.
