Glamping Party

You all know how much I love to camp and spend my time outdoors. But, I also enjoy the finer things in life. Since moving back to Utah, I've been living in a home that happens to have a great backyard. It's perfect for someone like me who wants the best of both worlds. So I decided to throw a Glamping Party (Glamorous+Camping+Party) and put our backyard to good use. There's an incredible fireplace back there, lots of space, cute trellises, etc. It was the perfect space for my glamping theme. I set up my hammock, gathered a mix of camping chairs and our other outdoor furniture, and my roommate was kind enough to set up some lights for me while the other got the fire going. (I have the best roommates.)
For the party I wanted to serve food that was delicious, easy to eat, and not your typical camping food... Besides the classic s'more, of course. Because I love s'mores and what's a glamorous camping party without s'mores? So while I was stocking up on party and camping/ glamping supplies at Walmart, I grabbed some Freschetta Brick Oven® Pizzas and Honey Maid Graham Crackers to serve my guests. Along with the classic s'more option, I also had prepared a more "glamorous" option (recipe below) for my guests to enjoy. It's a delicious recipe that takes the s'more and makes it even better! I also had prepared a side dish to go along with the pizza. I didn't want to serve the typical salad or breadstick option but wanted something healthy, too. So I came up with this Sweet Potato Popper recipe (see below) that was so delicious and a perfect pizza companion.

The main dish at my Glamping Party was Pizza... Freschetta Brick Oven® Pizza to be exact. I grew up eating this pizza, so I am a huge fan. But of course, we were Glamping and couldn't just use the oven to cook it, so I created a grill over my fire using two 3ft rods and a grate and we cooked the pizza right over the fire. It's easy enough, you just let your fire get nice and warm before you start cooking and keep your pizza frozen beforehand. When the bottom of the pizza has turned golden brown and the cheese has all melted, it's ready to eat. Freschetta® Naturally Rising pizzas would be a great option for your over-the-fire grilling as well!

Sweet Potato & Rosemary Poppers:
Sweet Potatoes (1/2-1 potato per person)
2 Garlic Cloves (minced)
1/2 cup Butter
1 Tbsp Rosemary
Greek Yogurt
Directions:
Slice your sweet potatoes into 1/2" thick rounds and space them out evenly on a baking sheet. Mince your garlic and separate your rosemary sprigs, then place them in a sauce pan with the butter. Over medium heat, melt your butter and mix it with the garlic and rosemary. Once melted, pour over your sliced sweet potatoes then bake them in the oven at 350 for 20 minutes.
Remove them from the baking sheet and place on your serving tray. Garnish them with a small dollop of greek yogurt and a small sprig of rosemary. Serve warm.

Honey Maid S'mores Treat:
Honey Maid Graham Crackers
1 cup Brown Sugar
2/3 cup Butter
1 bag Chocolate Chips
1 pkg Mini Marshmallows
Line a baking sheet with Graham Crackers and set aside. In a sauce pan over medium heat, melt your butter and brown sugar together. Let it cool a little while you pour your chocolate chips and marshmallows over the graham crackers, then evenly pour the melted butter and sugar over the baking sheet. Bake in the oven at 350 for 10 minutes or until the marshmallows start to turn golden.
This treat really is more for taste rather than looks. Once cut it is just a big mess, which is part of the fun! Just be prepared to wash your hands after.

The party was a blast and I loved seeing all of my guests in their most glamorous camping attire. I only got pictures of a few of the guests as the sun set quickly and then it was too dark. But it was a great turnout. We spent the evening around the campfire- swapping scary stories, dreaming about future travels, and eating all of the delicious Freschetta Brick Oven® & Honey Maid Graham Crackers.
This was such a fun party to plan and there were a lot of ideas that I didn't even get to use (too little time). What kinds of food, activities, or decor would you include in a Glamping Party?
