What started as a simple errand to grab Knorr cubes turned into a delightful market and grocery haul adventure. I couldn’t resist the fresh ingredients and unique finds at the public market near Greenfield. Among my spontaneous purchases was a bag of dried shrimp, perfect for elevating the flavor of a classic Filipino dish: Ginisang Monggo sa Manok (Sauteed Mung Beans with Chicken). This hearty recipe combines the earthy taste of mung beans, the savory goodness of chicken, and the umami kick of dried shrimp, creating a comforting meal that’s both nutritious and affordable.

To start, gather your ingredients: 1 cup of mung beans (monggo), 1/2 kg of chicken (preferably thigh or drumstick parts), 2 tablespoons of dried shrimp (hipon), garlic, onion, tomatoes, spinach or malunggay leaves, and the ever-reliable Knorr cubes for that extra burst of flavor. Begin by boiling the mung beans in water until they’re soft and tender. Meanwhile, sauté garlic, onion, and tomatoes in a pot. Add the chicken pieces, letting them cook until slightly golden. Toss in the dried shrimp for that savory aroma, followed by your boiled mung beans and a generous ladle of the cooking water to make a hearty broth.
