Here's something new!!
Recently my friend asked me to put some recipes of pasta, so thought of trying some spicy curry based spaghetti to start with :)
I had always loved pasta since my childhood days..but always wanted to try some spicy version of it.
This recipe of spicy curry sauce came up on the go and turned out to be super good...definitely it will be best for all spicy flavor lovers like me :) Well for those who are not much in favor of spicy food don't worry..I shall put more pasta recipes with Alfredo and Pesto sauce too in coming days :)
This is a pretty easy recipe to cook. Cooks in less than 30 mins for sure, prep would be additional 15 mins.
I served this dish along with Italian flavored Prawns fry as an accompaniment to spaghetti. Turned out good too..few of the prawns I cooked with Indian flavors too ...so it was a good combo and many varieties in-turn in a single dish, making this dish named Fusion Spaghetti :D
Do try it and let me know if your kid or you wont clean the plate ;)
Ingredients:
For Spaghetti:
- 250 gm Spaghetti (I used Angel Hair)
- Salt as per taste
- 1 Tbsp Oil
- 1/2 Tsp Black Pepper Powder
- 1/2 Tsp Garlic Powder
- 2 Tbsp Butter
- 2 Tbsp Minced Garlic
- 1 Tbsp Grated Ginger
- 1/2 Cup Carrot, shredded
- 1/4 Cup Cabbage or Bok Choy, shredded/sliced
- 1/4 Cup Spring Onion, cut
- 1/4 Cup Mushrooms, sliced(optional)
- 1 Cup Chicken stock
- 1 Tsp Red Chili Sauce
- 1 Tsp Soy Sauce
- 1 & 1/2 Tbsp Cornstarch
- 1 Tsp Tomato Ketchup
- 1 Tbsp any Curry Powder of your choice ( I like MDH Bombay Biryani Masala so I used that instead)
For Prawns:
- 8- 10 Medium Sized Prawns
- Salt as per taste
- 1 Tbsp Ginger-Garlic Paste
- 1 Tsp Red Chili Powder
- Italian Spiced Bread Crumbs
- 2 Tbsp Oil for frying
Method:
- First Cook the spaghetti as per instructions on packet. I boiled water in a pan, with little salt in it and then added noodles to it. Cook the spaghetti until al dente.
- Drain in colander and pass them once again through cold water.
- Add pepper powder, garlic powder, salt and oil to the noodles and rub well on them.
- Meanwhile, in a pan add butter, add garlic and ginger, fry for sometime. Add remaining vegetables and stir fry.
- In a bowl add chicken stock, add soy sauce, red chili sauce, cornstarch, tomato ketchup. Mix well.
- Add this mixture to the vegetables and cook till the gravy thickens. Turn off gas.
- For Prawns, clean and devein the prawns.
- Apply salt, red chili powder, ginger-garlic paste to them and coat well.
- Heat a skillet. Add little oil, cover individual prawn in the Italian spiced bread crumbs and shallow fry till cooked well.
- For serving, when the sauce is done, add spaghetti to it and mix well or you can serve separately i.e. place spaghetti on a plate and pour sauce on it.
- Serve along with hot spicy prawns fried.
- You can use any curry powder of your choice.
- Adjust the spices to suit your taste buds.
- I fried few prawns with just salt, turmeric and chili powder coated with semolina.
Enjoy Eating!! :)
