Fun Burrito and More…

A few nights ago I could of sworn there was some tomato soup in the drawer, went to make it and low and behold, no tomato soup. I found myself, as I so often do not knowing what to cook. When I saw a can of black beans (ding, ding, ding, a lightbulb went off in my head). This is a recipe my Mom showed me years ago and I have always used it as quick go to meal when I wasn’t much in the mood for a long involved cooking venture. Over the years I have made it my own, as I so frequently do with recipes.

What I love about this recipe is that it is super quick, you can make it in ten minutes AND you can use it for Breakfast, Lunch, OR Dinner! How convenient is that? You can whip up a big batch and have it for the week and that saves you a lot of cooking time that would normally cut into your busy schedule.

Ingredients
As always you can use any kind of these ingredients you want, it’s a matter of what tastes good to you (I would of course prefer organic everything over regular if it is available)

  • Black Beans
  • Corn
  • Onions
  • Garlic
  • Tortilla
  • Cheese

Directions

  1. Put a can of black beans and a can of corn in a pan and turn on the heat
  2. Chop up the garlic and onions and add them to the pan
  3. Put your choice of cheese on the tortilla (I suggest only using one slice of cheese, don’t want to over due it
  4. Throw your mixture of Black Beans, Corn, Onions, and Garlic on the the cheese and fold up the tortilla to make a burrito

Extra Ingredients and Ideas
I always like to give people a lot of options with the recipes I share. Here are a few of the other ingredients that go well with this recipe:

  • Sour Cream (Organic, you always want to try and get unpasteurized dairy products if possible)
  • Salsa
  • Chicken (if you want to spend the time to cook the chicken it is a great addition)
  • Eggs (take your mixture and throw it into some scrambled eggs in the morning)
  • Salad (this mixture is a great addition to a salad, makes a great lunch)
