Warm homemade fruity scones are great on a summer weekend, they are so easy and almost fool-proof!
A scone is quick cake bread with baking powder as the leavening agent and baked as individual size portions.
Ingredients
350g Self Raising Flour
1/4 Tsp Salt
1 Tsp Baking Powder
85g Butter
3 Tsbp Caster Sugar
1 Tsp Vanilla
175ml Milk
1 Tsp Vinegar or Lemon
100g Dried sultanas
Milk Glaze
Add flour, salt, baking powder, sugar and cold butter to a food processor and blitz.
Add vanilla, milk, vinegar to the food processor and mix until a dough forms. Remove the dough and knead on to a flour surface.
Add sultanas to the dough and knead. Roll out to about 1cm thick and using a cutter place scones on a greased baking tray and brush the tops lightly with milk. Bake in the oven at 200c for 12-15 minutes until golden brown.
Allow to cool slightly
Slice in half, add strawberry jam and whipped or clotted cream and enjoy.
