If you have an over ripe banana, here is a good way to use it up in an everyday fruit loaf.
Spread a little butter or keep it plain with your cuppa tea or coffee, the cake loaf has a lot of fruity flavour yet light not like a fruit cake.
Ingredients:
3 Eggs
100g Margarine
100g Muscavado Sugar
175g Self Raising Flour
1 Small Banana
100g Mixed Dried Fruit
50g Dried Apricot
50g Dried Dates
Add the eggs, margarine, muscavado sugar, self-raising flour and banana to a mixing bowl and beat on medium to high-speed for about 2 minutes.
Add the chopped dried apricots, dates and mixed fruit for the batter and fold in.
Add the batter to a greased or lined loaf tin.
Bake in the oven for about 1 hour to 1 hour 10 minutes at 160c checking every so often to make sure the cake doesn't over baked.
Slice and enjoy!
