Fried Mac and Cheese Bites.

Ah football season… is there anything better? Fall is my favorite season all around but there’s nothing better than the start of football season. Especially now that we live in the south. There are basically four seasons. Winter, summer, spring, and football.

One of the best parts about game day is the food. Wings, pizza, dips, and more… give me all the finger foods! When I think of football, I think of snack and finger foods, sitting around the TV with friends, and doing nothing else on Sundays but watching games.

One of the restaurants at my college used to serve Fried Mac and Cheese bites. And although I only ever had it one time, I seem to always crave it while watching football games. So this year, I made it a point to make them for the kickoff of football season. I picked up all of my ingredients at Walmart and prepped for our game day spread!

Ingredients:

1 box elbow macaroni

4 TBS flour

4 TBL butter

1 1/2 cups milk

3 cups Kraft Natural Shredded Cheese

2 eggs

Breadcrumbs for dipping

Salt and pepper

Oil for frying

Directions:

1.) Cook elbow macaroni according to package. Strain and put aside.

2.) In the same pot, melt butter.

3.) Slowly mix in flour.

4.) Slowly add milk.

5.) When mixture is smooth, slowly add cheese.

6.) Add salt and pepper to taste.

7.) When completely mixed, slowly add cooked elbow macaroni.

8.) Place macaroni in baking dish and place in refrigerator overnight. 

9.) Using hands, roll macaroni into small balls.

10.) Dip balls in flour, egg, then breadcrumbs.

11.) Heat oil in skillet.

12.) Place balls in skillet. Using spoon, flip every few minutes.

13.) Remove balls from oil when balls are thoroughly browned.

My favorite part about these, which happens to be a key component, is that you can prepare the mac and cheese the day before and then fry them up before kickoff. I actually learned this the hard way by trying to roll the balls too quickly after refrigerating for a short period of time. It makes it a lot easier to prepare the mac and cheese the day before and then just fry them up for game time.
