Tomato Salsa is a perfect accompaniment for any dish. They are simple and easy to make.
Ingredients:
Tomatoes - 2, chopped, seeded, drained
Onion - 1/4 cup, chopped
Green Capsicum - 1/4 cup, chopped
Jalapeno - 2 tsp, seeds removed, minced
Garlic - 1 clove, minced
Juice of 1/2 Lime
Olive Oil - 2 tsp
Coriander Leaves - 2 tblsp
Dried oregano - 1/3 tsp
Salt - 1/4 tsp
Black Pepper Powder as per taste
Method:
1. Mix all the ingredients in a bowl.
2. Cover and keep it in the fridge for 2 hours.
3. Remove and gently stir.
4. Cover again and keep it in the fridge until required.
5. Best if used within 24 hours.
