French Cherry Clafoutis

what to do with cherries? ….first of all eat them! ….second of all make cherry clafoutis!!! a delicious french recipe… but what is it? clafoutis isn´t really a cake, it rather resembles a pancake dough baked in a dish! Well I haven´t really figured that out yet, although I know clafoutis is absolutely delicious and moist when it has the right height about 2-3 cm… This recipe belongs to those in my recipe box when I feel like whipping something up quickly. You can add any fruit you like and also bake them in small souffle molds, as I did in this recipe.

this is what you will need:

  • 500g of cherries, pitted and sliced in halves (as in the picture)
  • 3 eggs
  • 30g butter, melted
  • 240ml milk
  • 100g flour
  • 1/4 tsp. salt
  • 100g sugar
  • 1/2 tsp. vanilla

Pre-heat oven to 180°C. Butter a ceramic or glass lasagna mold. Toss 2 tbs. of sugar to coat butter. Mix eggs, vanilla and sugar until creamy. Add melted butter and milk. And last but not least mix in flour. Elapse dough in your sugar and butter coated mold and generously top with cherries Bake in oven for about 30 minutes until the top turns golden brown.

Serve with coffee or milk when it´s fresh! Then this one tastes best!
