Pumpkin Tarte Flambé with Bacon, Goat Cheese and Herbs

kurbisfladen-2502-2Have you ever heard about flammkuchen? Flammkuchen or as it is translated tarte flambée is a german speciality. The traditional base is a very thin bread dough topped with onions, sour cream and bacon. I modified the Flammkuchen recipe using puff pastry and other toppings. That way I can make a quick dish and use up some pumpkin from our yard as well. We normally make a lot of pumpkin soup and pumpkin risotto these days…But I love using pumpkin in other dishes and trying new recipes! Pumpkin gives this recipe a really good twist! This is one of the recipes you can make any time in no time! Preparation time is only 15 minutes and the tarte flambée is baked in even less than 30 minutes! It´s taste is light so it´s a perfect lunch or dinner meal. You can serve a delicious salad on the side and you´re ready to go!kurbisfladen-2447This is what you will need:

  • one roll of puff pastry
  • 200g hokkaido pumpkin
  • 125g creme fraîche
  • one goat cheese roll (my favorite brand is chavroux)
  • 200g bacon, diced
  • a handful of sage, roughly chopped
  • a handful of rosemary, finely chopped
  • salt and pepper for taste
  • honey and walnuts to drizzle on top

Roll out the puff pastry and lay on a baking tray. Peel the pumpkin and remove the seeds. Cut the pumpkin in very thin, about 3 mm thick slices and set aside. Combine creme fraîche in a bowl with salt and pepper. Dice the bacon. Cut the goat cheese roll in 1 cm pieces. Finely chop the rosemary and roughly chop the sage. Now you can spread the creme fraîche mixture on  the rolled out puff pastry. Place the pumpkin slices on top, generously drizzle the bacon over the pumpkin and also add the goat cheese slices and half of the herbs. Bake in oven for about 20 minutes (oven temperature 180°C). Drizzle the rest of the fresh herbs on top. Serve right away, drizzle some honey and walnuts on top (as you prefer).
