Gourmet Chocolate Covered Strawberries

Hey readers! For today’s recipe I’m sharing how to make easy chocolate confections. Dip and ordinary piece of fruit, a cookie, candy or nut into melted chocolate and everyone agrees that is becomes extraordinary. Or, for a change of pace try crispy Marshmallow Bars. Better than candy, these confections don’t have any wrappers to deter you, and you can lick the spoon :) these treats are perfect for any occasion–everyone will love them. Keep reading for all the deets.

Easy Chocolate Confections

Ingredients:

  • 1 package semisweet chocolate chips
  • 1 tablespoon plus 1 teaspoon shortening
  • 1/4 teaspoon ground cinnamon, if desired
  • Dippers, such as strawberries, caramels, dark sweet cherries, Maraschino cherries, pineapple chunks, small pretzels, cookies or large marshmallows.

Directions:

  1. Line jelly roll pan, 15 1/2 x 10 1/2 x 1 inch, with waxed paper. Heat chocolate chips, shortening and cinnamon in 1 quart heavy saucepan over low heat, stirring constantly, until smooth; remove from heat. Coat any of the dippers about 3/4 of the way with chocolate mixture. Place in pan. Refrigerate uncovered 30 minutes or until chocolate is firm.

Marshmallow Bars

Ingredients:

  • 32 large marshmallow or 3 cups miniature marshmallows
  • 1/4 cup margarine or butter
  • 1/2 teaspoon vanilla
  • 5 cups crispy corn puff, toasted oat, corn flake or whole wheat flake cereal
  • 1 package semisweet chocolate chips

Directions:

  1. Grease square pan, 9 x 9 x 2 inches. Heat marshmallows and margarine in 3 quart saucepan over low heat, stir constantly, until marshmallows are melted and mixture is smooth; remove from heat. Stir in vanilla. Stir in half of the cereal at a time until evenly coated. Press in pan. Heat chocolate chips in heavy saucepan over low heat, stirring frequently, until melted. Spread over cereal mixture in pan; cool. Cut into 2 x 1 inch bars.

Variations:

Try this pretty and enticing variation to easy chocolate confections:

  • White chocolate confections. Substitute 6 ounces vanilla flavored candy coating, cut up, for the chocolate chips.

Try one or both of these tasty variations of marshmallow bars:

  • Coconutty marshmallow bars. Substitute 1/2 cup flaked coconut and 1/2 cup coarsely chopped nuts for 1 cup of the cereal.
  • Peanut butter marshmallow bars. Stir 1/2 cup peanut butter into marshmallow margarine mixture until melted.
