Fluffiest Mousse Au Chocolat

It´s kind of difficult to find the right and perfect recipe for a delicious fluffy, chocolaty but not too sweet tasting mousse au chocolate, which literally melts on your tongue. I´ve already tried so many recipes from friends and cookbooks, more and less complex ones. I even love to order them in restaurants, trying to find the most delicious one, to ask for the recipe. Anyways this one is a fairly difficult recipe and fulfills all parameters I think a perfect mousse au chocolate needs. If you have good recipes I will try them as well, because this is such an easy and timeless dessert perfect for any occasion, I´m ready to learn. Your recipe might even be better than mine, so I´ll give it a chance. Until then I´m proud to share this delicious recipe with you!

this is what you will need…

  • 5 egg yolks
  • 60g powdered sugar
  • 100g chocolate
  • 1/4l heavy cream
  • raspberries to garnish

Mix egg yolks and sugar in a heat proof bowl over boiling water for about 2 minutes. Then remove from heat and mix for another 2 minutes. Melt chocolate in another heat proof bowl over the same pot of boiling water. Mix chocolate and egg yolk mixture until well combined. Mix heavy cream until whipped and fold into chocolate mixture. Fill mousse into glasses and chill in fridge for a couple of hours.
