Last night I had a soccer game at 9pm. It is such a great workout and super fun to play with all my friends, but I always end up going to bed late and then struggling to get out of bed in the morning.
Case and point, this morning!
My alarm went off at 6am, I didn’t get out of bed until 7:30… oopsie.
That means, I skipped my workout… oopsie!
But I was able to make my first ever batch of custard oats! And I am so happy I had time to cook ‘em up!
I just found about about custard oats (clearly I am a newbie in the kitchen) and have been dying to try them. I eat eggs and oatmeal in the morning, so why not combine them together. What an idea!
It was so simple!
Basic Custard Oats
In the mix:
1/4 cup liquid egg whites
1/3 cup whole grain oats
2/3 cup of water
1 tsp vanilla extract
toppings to your liking
Directions: Combine the water, eggs, and oats into a pot on the stove. Whisk together the ingredients for 2-3 minutes, until the mixture starts to thicken up. Add the vanilla, and continue to stir for another minute. Take off the stove and top with whatever you want – I put some ground cinnamon and pumpkin spice.
I added some hot water after I took it off the stove, because I like my oats a less thick and more liquid-y.
I love the idea of custard oats! Not only do you get your whole grains but you also get additional protein. It’s genius!
